Ingredients

  • 1 pound of fresh carrots, peeled and cut into ½-inch sticks
  • 3 tablespoons of honey
  • 2 tablespoons of pure maple syrup
  • 2 tablespoons of olive oil
  • 1 teaspoon of ground cinnamon
  • ½ teaspoon of salt
  • ¼ teaspoon of black pepper
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the carrots: Begin by peeling the carrots. Slice them into uniform sticks about ½ inch thick to ensure even cooking.
  2. Make the glaze: In a small mixing bowl, whisk together honey, maple syrup, olive oil, cinnamon, salt, and pepper.
  3. Toss the carrots: In a large mixing bowl, add the carrot sticks and pour the honey-maple mixture over them. Toss until all the carrots are evenly coated.
  4. Preheat the air fryer: Set your air fryer to preheat at 380°F (193°C) for about 3-5 minutes.
  5. Cook the carrots: Place the coated carrots into the air fryer basket in a single layer, making sure they’re not overlapping. Cook for 15-18 minutes, shaking the basket halfway through.
  6. Check for doneness: When the carrots are tender and caramelized, take them out of the air fryer.
  7. Serve and garnish: Transfer the roasted carrots to a serving dish, drizzle a bit of additional maple syrup over the top if desired, and sprinkle chopped fresh parsley for a beautiful finish.
