Ingredients

  • 1.5 pounds boneless, skinless chicken thighs, cut into 1-inch bites
  • 1/2 cup plain yogurt (for marinade)
  • 1 tablespoon lemon juice
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 cup panko breadcrumbs (use gluten-free panko for GF option)
  • 2 tablespoons olive oil (for tossing)
  • 1/3 cup honey
  • 1/2 cup BBQ sauce (your favorite smooth variety)
  • 1 tablespoon apple cider vinegar (optional, for brightness)
  • Sesame seeds and chopped parsley for garnish


Instructions

  1. Marinate the chicken (15–30 minutes): In a bowl, whisk yogurt, lemon juice, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss chicken bites in the marinade until coated. Refrigerate for at least 15 minutes (longer for deeper flavor).
  2. Heat and coat: Preheat your air fryer to 400°F (200°C) for 3–5 minutes. Mix panko breadcrumbs and olive oil in a shallow bowl. Remove chicken from marinade, letting excess drip off, then dredge pieces in the panko to coat.
  3. Air fry in batches: Arrange chicken bites in a single layer in the air fryer basket, leaving small gaps—work in batches to avoid overcrowding. Air fry at 400°F for 8–10 minutes, shaking the basket halfway through, until chicken reaches 165°F and edges are golden-crisp.
  4. Make the glaze: While chicken cooks, whisk honey, BBQ sauce, and apple cider vinegar in a small saucepan. Warm gently until combined and slightly thickened, about 2–3 minutes.
  5. Toss and finish: Transfer cooked bites to a bowl, pour over the warm glaze, and toss until evenly coated. Return to the air fryer for 1–2 minutes if you want the glaze to set and get tacky.
  6. Garnish and serve: Sprinkle with sesame seeds and parsley. Serve hot with apple slices or roasted squash for an autumnal plate.
