Description

Ingredients

  • 6 large eggs
  • 1/2 cup cottage cheese (or vegan alternative)
  • 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
  • 1/4 cup finely chopped vegetables (spinach, bell pepper, or mushrooms)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • Fresh herbs for garnish (optional)


Instructions

  1. Prepare the Air Fryer: Preheat your air fryer to 270°F (130°C) for about 5 minutes.
  2. Bowl Preparation: In a large mixing bowl, crack all six eggs. Add the cottage cheese, salt, and black pepper. Whisk vigorously until smooth.
  3. Mix in Add-ins: Gently fold in the shredded cheese and finely chopped vegetables.
  4. Pour into Molds: Grease silicone molds or ramekins lightly with oil or cooking spray. Pour the egg mixture evenly into the molds, filling them two-thirds full.
  5. Air Frying: Place the molds in the air fryer basket and cook for 12-15 minutes until the tops are set.
