Ingredients

  • 2 large chicken breasts, boneless and skinless
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs (preferably seasoned)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Cooking spray or a bit of olive oil (for spraying)
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Prepare the chicken: Start by placing the chicken breasts between two sheets of plastic wrap. Use a meat mallet or rolling pin to gently pound them to an even thickness, about ½ inch.
  2. Set up your breading station: Get three shallow dishes ready. In the first dish, add flour mixed with a pinch of salt and pepper. In the second dish, whisk the eggs until well combined. In the third dish, spread the breadcrumbs mixed with garlic powder and paprika.
  3. Bread the chicken: Begin by dredging each piece of chicken in flour, shaking off the excess. Next, dip it into the beaten eggs, ensuring it’s fully coated. Finally, press the chicken into the breadcrumb mixture for an even coating.
  4. Air fry the schnitzel: Preheat your air fryer to 400°F (200°C). Lightly spray the air fryer basket with cooking spray. Place the breaded chicken in a single layer and spray the tops lightly with olive oil.
  5. Cook to perfection: Air fry the schnitzels for about 10-12 minutes, flipping halfway through until golden brown and reaching an internal temperature of 165°F (75°C).
  6. Garnish and serve: Remove the schnitzels from the air fryer and let rest for a minute. Garnish with fresh parsley before serving.

Notes

For an extra crunch, consider using panko breadcrumbs. Ensure each chicken piece is well-coated for a crispier schnitzel.
