Ingredients
- 4 medium-sized apples (such as Honeycrisp or Gala)
- 1 cup rolled oats
- 1/2 cup brown sugar or a sweetener of your choice
- 1 tablespoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 cup chopped pecans or walnuts (or omit for nut-free)
- 1/2 cup raisins or cranberries (optional)
- 1/4 cup melted coconut oil or unsalted butter
- 1/4 cup maple syrup (for drizzling)
- A pinch of salt
Instructions
- Prepare the Apples: Rinse the apples under cool water. Use a sharp knife or apple corer to remove the core, leaving the bottom intact.
- Make the Filling: In a mixing bowl, combine oats, brown sugar, cinnamon, nutmeg, chopped nuts, raisins or cranberries, and a pinch of salt. Mix in melted coconut oil or butter until crumbly.
- Stuff the Apples: Spoon the oat mixture into each apple, packing down slightly but not overflowing.
- Air Fry the Apples: Preheat your air fryer to 350°F (180°C). Place the stuffed apples in the basket and air fry for 10-12 minutes, or until tender and golden brown.
- Drizzle with Maple Syrup: Remove the apples from the air fryer and drizzle with maple syrup.
- Serve Warm: Enjoy your baked apples warm, potentially with vanilla ice cream or yogurt.
