Description
A delightful blend of tender dough rolled around juicy blueberries, perfectly sweetened and lightly crisped in the air fryer.
Ingredients
- 2 cups all-purpose flour (or gluten-free flour blend)
- 1 tablespoon baking powder
- 1 tablespoon sugar
- ½ teaspoon salt
- ½ cup unsalted butter, chilled and cubed (or plant-based butter)
- ½ cup milk (or almond milk)
- 1 ½ cups fresh or frozen blueberries
- ¼ cup sugar (adjust based on sweetness preference)
- 1 teaspoon lemon juice
- 1 teaspoon cornstarch
- Powdered sugar for dusting (optional)
- Cinnamon for sprinkling (optional)
- Streusel topping (optional)
Instructions
- In a large mixing bowl, combine the flour, baking powder, sugar, and salt.
- Use a pastry cutter or your fingers to cut in the chilled butter until the mixture resembles coarse crumbs.
- Gradually add the milk, stirring until just combined.
- In a small saucepan over medium heat, combine the blueberries, sugar, lemon juice, and cornstarch.
- Cook until the blueberries start to burst and the mixture thickens (about 5–7 minutes). Remove from heat and set aside to cool.
- On a lightly floured surface, roll out the dough into a rectangle, about ¼ inch thick.
- Spoon the blueberry filling evenly over the dough, leaving a small border around the edges.
- Carefully roll the dough into a log, pinching the seams to seal.
- Cut the log into 1–2 inch pieces and place them in the air fryer basket.
- Preheat your air fryer to 350°F (175°C).
- Air fry the roll-ups for about 12–15 minutes, or until golden brown and cooked through.
- Remove the roll-ups from the air fryer, allow to cool slightly, then dust with powdered sugar or sprinkle with cinnamon.
Notes
Try adding a pinch of nutmeg or allspice for added warmth, and ensure to pinch the seams tightly when rolling to prevent spreading.
