Description

A delightful blend of tender dough rolled around juicy blueberries, perfectly sweetened and lightly crisped in the air fryer.


Ingredients

  • 2 cups all-purpose flour (or gluten-free flour blend)
  • 1 tablespoon baking powder
  • 1 tablespoon sugar
  • ½ teaspoon salt
  • ½ cup unsalted butter, chilled and cubed (or plant-based butter)
  • ½ cup milk (or almond milk)
  • 1 ½ cups fresh or frozen blueberries
  • ¼ cup sugar (adjust based on sweetness preference)
  • 1 teaspoon lemon juice
  • 1 teaspoon cornstarch
  • Powdered sugar for dusting (optional)
  • Cinnamon for sprinkling (optional)
  • Streusel topping (optional)


Instructions

  1. In a large mixing bowl, combine the flour, baking powder, sugar, and salt.
  2. Use a pastry cutter or your fingers to cut in the chilled butter until the mixture resembles coarse crumbs.
  3. Gradually add the milk, stirring until just combined.
  4. In a small saucepan over medium heat, combine the blueberries, sugar, lemon juice, and cornstarch.
  5. Cook until the blueberries start to burst and the mixture thickens (about 5–7 minutes). Remove from heat and set aside to cool.
  6. On a lightly floured surface, roll out the dough into a rectangle, about ¼ inch thick.
  7. Spoon the blueberry filling evenly over the dough, leaving a small border around the edges.
  8. Carefully roll the dough into a log, pinching the seams to seal.
  9. Cut the log into 1–2 inch pieces and place them in the air fryer basket.
  10. Preheat your air fryer to 350°F (175°C).
  11. Air fry the roll-ups for about 12–15 minutes, or until golden brown and cooked through.
  12. Remove the roll-ups from the air fryer, allow to cool slightly, then dust with powdered sugar or sprinkle with cinnamon.

Notes

Try adding a pinch of nutmeg or allspice for added warmth, and ensure to pinch the seams tightly when rolling to prevent spreading.
