Description

Delightful Air Fryer Blueberry Muffins made with juicy blueberries and a hint of cinnamon, perfect for celebrating the flavors of fall.


Ingredients

  • 1 ½ cups all-purpose flour
  • ½ cup granulated sugar
  • ½ teaspoon salt
  • 2 teaspoons baking powder
  • ½ teaspoon cinnamon
  • 1 large egg
  • ½ cup milk (or almond milk for a non-dairy version)
  • ¼ cup vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries (if using frozen, do not thaw)


Instructions

  1. Prepare your muffin liners: Start by lining your muffin tray with paper liners or greasing it with a bit of cooking spray to ensure easy removal after baking.
  2. Mix dry ingredients: In a medium bowl, whisk together the all-purpose flour, sugar, salt, baking powder, and cinnamon until well combined.
  3. Combine wet ingredients: In a separate large bowl, beat the egg lightly, then add in the milk, vegetable oil, and vanilla extract. Mix thoroughly until everything is well combined.
  4. Add dry to wet: Gradually fold the dry ingredients into the wet mixture, being careful not to overmix. Stir until just combined.
  5. Gently fold in blueberries: Add the blueberries to the batter and gently fold them in to distribute them evenly without breaking them.
  6. Fill muffin cups: Using a spoon, fill the muffin liners about â…” of the way full with the batter.
  7. Preheat the air fryer: Preheat your air fryer to 320°F (160°C) for about 5 minutes.
  8. Cook the muffins: Place the muffin tray in the air fryer basket and cook for 10-12 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Adjust the cooking time based on your specific air fryer model if necessary.
