Ingredients
- 1 small zucchini, diced
- 1 bell pepper (any color), chopped
- 1/2 red onion, sliced
- 1/2 cup canned black beans, rinsed
- 1 tsp olive oil
- 1/2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- 4 small corn tortillas
- 2 tbsp fresh cilantro, chopped
- 1/4 avocado, sliced
- Lime wedges for serving
Instructions
- Preheat air fryer to 375°F (190°C).
- In a bowl, toss zucchini, bell pepper, onion, and black beans with olive oil, cumin, paprika, garlic powder, salt, and pepper.
- Air fry for 12–15 minutes, shaking once halfway through, until veggies are tender and slightly crisp.
- Warm tortillas on a skillet or wrap in foil and heat in oven.
- Divide veggie mix among tortillas. Top with avocado, cilantro, and a squeeze of lime. Serve immediately.
Notes
For best results, chop veggies evenly and avoid overcrowding the air fryer. Wrap tortillas in a damp towel before microwaving to make them flexible. Add a smear of hummus or Greek yogurt for extra creaminess. Perfect for meal prep, just reheat the filling and assemble fresh.
