Description

Air-Fried Veggie Tacos (200 Calories) are crisp, cozy, and packed with roasted flavor, perfect for fall evenings or quick weeknight dinners. Inspired by the vibrant street markets of Mexico City and made air-fryer friendly for a light, modern twist.


Ingredients

  • 1 small zucchini, diced
  • 1 bell pepper (any color), chopped
  • 1/2 red onion, sliced
  • 1/2 cup canned black beans, rinsed
  • 1 tsp olive oil
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 4 small corn tortillas
  • 2 tbsp fresh cilantro, chopped
  • 1/4 avocado, sliced
  • Lime wedges for serving


Instructions

  1. Preheat air fryer to 375°F (190°C).
  2. In a bowl, toss zucchini, bell pepper, onion, and black beans with olive oil, cumin, paprika, garlic powder, salt, and pepper.
  3. Air fry for 12–15 minutes, shaking once halfway through, until veggies are tender and slightly crisp.
  4. Warm tortillas on a skillet or wrap in foil and heat in oven.
  5. Divide veggie mix among tortillas. Top with avocado, cilantro, and a squeeze of lime. Serve immediately.

Notes

For best results, chop veggies evenly and avoid overcrowding the air fryer. Wrap tortillas in a damp towel before microwaving to make them flexible. Add a smear of hummus or Greek yogurt for extra creaminess. Perfect for meal prep, just reheat the filling and assemble fresh.
