Ingredients
- 1 cup all-purpose flour (or gluten-free alternative)
- 1/4 tsp salt
- 1/4 cup unsalted butter, softened (or a halal alternative)
- 2-3 tbsp cold water
- 1/2 cup pecan halves
- 1/2 cup light corn syrup (or maple syrup for a natural twist)
- 1/4 cup brown sugar
- 1 large egg
- 1 tsp vanilla extract
- 1/4 tsp salt
- 1/4 tsp ground cinnamon (optional)
Instructions
- Make the Pie Crust: In a mixing bowl, combine the flour and salt.
- Add the softened butter and mix until crumbly.
- Gradually add cold water, one tablespoon at a time, until the dough comes together. Don’t overwork the dough!
- Shape the dough into a ball, wrap it in plastic, and refrigerate for about 30 minutes.
- Prepare the Filling: In a medium bowl, whisk together corn syrup, brown sugar, eggs, vanilla extract, salt, and cinnamon (if using) until smooth.
- Stir in the pecan halves, ensuring they are evenly coated.
- Assemble the Pie: Roll out the chilled pie dough on a floured surface to fit a small pie pan (about 6 inches).
- Carefully place the rolled dough into the pan, trimming any excess around the edges.
- Pour the filling mixture into the prepared crust, spreading the pecans evenly.
- Air Fry the Pie: Preheat your air fryer to 320°F (160°C).
- Place the pie in the air fryer basket and cook for 12-15 minutes, or until the filling is set and the crust is golden brown.
- Check halfway through cooking to ensure the pie is baking evenly.
- Let Cool and Enjoy: Once done, remove the pie from the air fryer and allow it to cool for about 10 minutes.
