Ingredients
- 4 cups watermelon, cut into bite-sized cubes
- 1 cup crumbled feta (use halal-certified feta)
- 1/4 cup fresh mint leaves, roughly torn
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon fresh lime juice (or lemon juice)
- Pinch of flaky sea salt
- Freshly ground black pepper, to taste
- Optional: A drizzle of honey for extra sweetness
- Optional: A handful of arugula or baby spinach for color
Instructions
- Prep the watermelon: Cut a chilled watermelon into even, bite-sized cubes and transfer to a medium bowl.
- Add the feta and mint: Sprinkle the crumbled feta and torn mint leaves over the watermelon.
- Make the dressing: Whisk olive oil, lime juice, a pinch of salt, and a grind of black pepper in a small bowl.
- Toss gently: Pour the dressing over the salad and toss carefully so the watermelon keeps its shape.
- Serve immediately: Plate the salad or chill briefly for 5–10 minutes if you prefer it extra-cool.
