Description

A quick and refreshing salad that pairs sweet watermelon with tangy feta and fresh mint, perfect for summer.

Ingredients

  • 4 cups watermelon, cut into bite-sized cubes
  • 1 cup crumbled feta (use halal-certified feta)
  • 1/4 cup fresh mint leaves, roughly torn
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lime juice (or lemon juice)
  • Pinch of flaky sea salt
  • Freshly ground black pepper, to taste
  • Optional: A drizzle of honey for extra sweetness
  • Optional: A handful of arugula or baby spinach for color

Instructions

  1. Prep the watermelon: Cut a chilled watermelon into even, bite-sized cubes and transfer to a medium bowl.
  2. Add the feta and mint: Sprinkle the crumbled feta and torn mint leaves over the watermelon.
  3. Make the dressing: Whisk olive oil, lime juice, a pinch of salt, and a grind of black pepper in a small bowl.
  4. Toss gently: Pour the dressing over the salad and toss carefully so the watermelon keeps its shape.
  5. Serve immediately: Plate the salad or chill briefly for 5–10 minutes if you prefer it extra-cool.

Notes

For best results, drain excess juice from watermelon and use quality feta for a balanced flavor.
