Description
A creamy, savory chicken dish with just four ingredients, perfect for busy weeknights and cozy fall dinners.
Ingredients
- 4 boneless, skinless chicken breasts (about 1.5–2 lbs)
- 1 (1 oz) packet ranch seasoning mix
- 8 oz cream cheese, softened
- 1 1/2 cups shredded cheddar cheese (or a melty blend)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish. Pat the chicken breasts dry and season both sides lightly with salt and pepper.
- Combine the softened cream cheese and ranch seasoning in a medium bowl until smooth. Stir in 1 cup of shredded cheddar.
- Spread a thin layer of the mixture in the bottom of the dish. Place the chicken breasts in the dish, then spoon the remaining ranch-cream mixture evenly over each breast. Sprinkle the remaining 1/2 cup of shredded cheddar on top.
- Bake uncovered for 25–30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C). For a golden top, broil for 1–2 minutes, watching carefully.
- Let the bake rest for 5 minutes before serving so the juices settle and the topping firms slightly.
Notes
Pound thicker breasts for even cooking and soften cream cheese to room temperature for easier mixing.
