Quick and comforting chicken bites sautéed in garlic butter, perfect for busy weeknights.
Ingredients
- 1 lb boneless, skinless chicken thighs or breasts, cut into 1-inch bites
- 3 tbsp unsalted butter
- 1 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp freshly ground black pepper
- 1/2 tsp smoked paprika (optional)
- 1 tbsp lemon juice
- 1 tbsp honey or maple syrup (optional)
- 2 tbsp chopped fresh parsley
- Lemon wedges, for serving
Instructions
- Prep the chicken: Pat the chicken dry and cut into bite-sized pieces. Season evenly with salt, pepper, and smoked paprika.
- Heat the pan: Place a large skillet over medium-high heat and add olive oil and 2 tablespoons of butter. Let the butter foam but not brown.
- Sear the chicken: Add chicken in a single layer. Cook undisturbed for 2–3 minutes until golden, then flip and cook an additional 2–3 minutes until cooked through.
- Add garlic and finish: Push chicken to one side and add the remaining tablespoon of butter and minced garlic. Cook for 30–45 seconds until fragrant, then mix with the chicken. Stir in lemon juice and honey/maple syrup if using.
- Garnish and serve: Remove from heat, sprinkle with parsley, and serve immediately with lemon wedges.
Notes
Don’t overcrowd the pan for best results. Uniform pieces cook evenly, and letting the chicken rest helps retain moisture.
