Ingredients
- 1/2 cup whole wheat pastry flour (or all-purpose)
- 1/4 cup unsweetened cocoa powder
- 1/2 tsp baking powder
- 1/8 tsp salt
- 1/3 cup brown sugar, packed
- 2 large eggs, room temperature
- 3 tbsp neutral oil (like canola or sunflower)
- 1 tsp vanilla extract
- 2 tbsp plain yogurt
- 2 tbsp mini chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment, letting the paper hang over the edges for easy removal.
- Whisk together flour, cocoa powder, baking powder, and salt in a bowl. Set aside.
- In a separate bowl, whisk the brown sugar and eggs until slightly pale. Whisk in oil, vanilla, and yogurt until smooth.
- Gently fold the dry mix into the wet until just combined. Stir in the mini chocolate chips if using.
- Spread batter evenly in the prepared pan. Bake for 15–18 minutes, or until a toothpick comes out with a few moist crumbs. Cool in the pan for 10 minutes, then lift out and cool completely on a wire rack.
Notes
For fudgy brownies, avoid overmixing and watch the baking time closely. Use room-temperature eggs for better texture.
